Hey there friends! So I find myself in this awesome season of life with 2 young children. I really do love it, but some ALL things are more difficult than they used to be. One thing I’ve found that I know I can do. Share a meal. I mean, we are going to eat anyway, I can totally make double the food. I can.
I often sign up to do this for an adoption support group I’m in.
So here’s my favorite new go-to share meal. Chicken Salad with salad, fruit, crackers and cookies. It’s easy. You can make it early, it’s cold (bonus land for not having to keep it hot), it’s not sloshy, and it fits in zip lock bags.
This recipe is so super easy, and totally open to customization. But one ingredient I HIGHLY recommend. Homemade mayo. There are about a thousand recipes on Pinterest, and they are all about the same! I used this one, and I pinned it to my board on Pinterest.
I include a bag of lettuce and uncut tomatoes and cucumbers. All this stuff gets mushy quite easily. So separate is better.
Then I round the meal out with fruit, crackers and chocolate chip cookies!
Then I bag everything and package in a paper grocery sack.
Not only does this deliver well, your portion is in the fridge and ready when you get back home.

- 1 rotisserie chicken Cooked in the deli at the grocery. Sub a few chicken breasts as desired.
- 1.5 apples any variety
- 1/2 cup raisins
- 1-2 stalks celery
- 5-10 red grapes Cut in half or quarters
- 1/4 cup pecans
- 1/4 cup homemade mayo more or less to taste
- dash salt and pepper
- Chop all ingredients, stir to combine.
