Easy Strawberry Banana Cupcake Recipe

Strawberry Banana Cupcakes, from a mix.

Easiness.

So…as you know I love to make things from scratch.

I feel so Martha or Julia.

I don’ t always have time to make from scratch…often I don’t have time.

So I feel it’s important to give ideas for those with loads of time to bake and those with no time to bake.

This one is super easy. Here’s what you need:

Yellow cake mix

Strawberry frosting (we used 2 cans because we filled the centers also)

3/4 cup mashed bananas (about 2 and try to buy old brown ones)

3.4 oz instant banana pudding

4 eggs

1 cup water

1/4 cup vegetable oil

strawberries for garnish

For the record, I have no idea what I took a picture of above.

I left out the vegetable oil and added milk, sugar, and vanilla.

Apparently they just jumped in the picture for fun.

You don’t actually need these items, but feel free to set them on your counter to watch the action.

I have no brain.

Mash the bananas and mix everything together except the strawberries and frosting.

This should look like a regular cake mix, but may be a little bumpy from the bananas.

Yumminess.

We licked the bowl:)

Bake according to cake package directions.  They start to brown quickly, so be careful not to over-cook.

If you want to fill the cupcakes, cut a cone shape out of each top.

Slice the tip off the cone.

Add icing in the center (we used a ziplock with the corner cut out)

Re-top and add more icing.

I would have more pictures of these steps, but apparently I don’t know how to use a camera.

They are all fuzzy. boo.

Now garnish with a lovely red strawberry and you’re done!

It’s the perfect mix of strawberry and banana.

They live in such harmony don’t they?
